WINEMAKING

For the base wine, the fruit was handpicked and destemmed directly to open fermenters.
Fermented with indigenous yeast, the ferments were gently hand plunged twice daily. The wine was
then pressed off a few days after completion of primary ferment and matured in old French
barriques for two years. Tiraged in June 2020, the wine was then allowed 29 months maturation on
lees before being disgorged in November 2022.

TASTING NOTE

Attractive bright garnet in colour with just the right amount of fizz. Aromas of ripe cherry and
chocolate are interlaced with attractive savoury spice. The palate is generous, packed with dense
dark fruits. Balanced sweetness is paired with a mouth filling creaminess owed to time spent on
tirage.
